Instead of fighting with the air, IR lamps send energy straight into the moisture inside the fruit. It&amp;rsquo;s direct. It&amp;rsquo;s efficient.&#xA;&lt;strong&gt;Getting the heat right&lt;/strong&gt;&#xA;If you want to actually see a return on this, you can&amp;rsquo;t just guess. You&amp;rsquo;ve got to pick your lamps based on how juicy the fruit is.&#xA;Shortwave IR is the way to go if you need to get deep into the pulp and move that water out fast. We usually stick with high-wattage quartz tubes. Why? Because they let you keep the equipment compact. You can actually shorten your tunnel without slowing down your production.&#xA;But here&amp;rsquo;s the trick: it&amp;rsquo;s a balancing act.&#xA;If your belt is crawling and you&amp;rsquo;ve got the heat cranked, you&amp;rsquo;ll scorch the skin. But if the belt is flying, you&amp;rsquo;ll end up with a product that&amp;rsquo;s dry on the outside and soggy in the middle. You have to find that sweet spot.&#xA;&lt;strong&gt;Built for the mess&lt;/strong&gt;&#xA;Fruit factories are tough places. They&amp;rsquo;re humid, they&amp;rsquo;re sticky, and things tend to corrode.&#xA;We don&amp;rsquo;t build these things to look pretty in a brochure; we build them to take a beating. We use quartz glass and specific coatings so the lamps don&amp;rsquo;t just burn out the moment things get humid.&#xA;And we use standard connectors. I&amp;rsquo;ve been there—you can&amp;rsquo;t have your entire line dead for four hours just because one tube popped. You need to be able to swap it out and get moving again in minutes.&#xA;&lt;strong&gt;The catch&lt;/strong&gt;&#xA;Now, it&amp;rsquo;s not all magic. High-density IR heating pulls a lot of power.&#xA;If you&amp;rsquo;re dropping in a bank of 2kW lamps, check your electrical panel. Make sure your wiring and breakers can actually handle that peak draw, or you&amp;rsquo;re going to have a bad day.&#xA;Also, watch your airflow. If the tunnel isn&amp;rsquo;t vented properly, the heat just sits there. That ambient heat will eat through your conveyor belts.
