You get exactly what you need for your belt speed and moisture goals. How it actually works Think about it this way: hot air is slow. It has to warm up the space around the fruit before the fruit even feels it. IR is different. We use quartz lamps (short and medium-wave) that dive straight through the skin. The energy goes right into the water molecules. It’s instant. No waiting around for the oven to “get up to temp.” You get a faster ramp-up, a smaller footprint for your drying tunnel, and a much lower power bill. Getting the setup right Here is where people usually mess up: power density. If you crank the wattage too high per millimeter, you can shorten your tunnel, but you’ll end up scorching the surface of your fruit. Nobody wants burnt mangoes. You have to find that sweet spot between voltage and lamp length so the heat spreads evenly across the belt. Also, a quick tip: if you’re running a high-wattage array, don’t skimp on the cooling fans. If the housings get too hot, your lamps will burn out way faster than they should.
